Chicken with Mustard Gravy

One of the things I love about sometimes making out my weekly menu’s is that I can try all the new recipes I want. But sometimes, when I’m trying to come up with meals to satisfy my family with, it’s great to lean on some of your old stand-by favorites. This dinner, happens to be one of them.

I stumbled across this chicken recipe years ago in one of my Taste of Home magazines and fell in love. It’s simple, it’s easy, and full of flavor! A simple mustard gravy that goes over a deliciously moist chicken breast that’s been cooked in butter. Could there be anything more divine? Anything more satisfying? I think not!

This chicken dish doesn’t require a ton of fuss or fancy ingredients; just normal ingredients that are already found among your fridge/pantry staples. Since these are ingredients you already should have, then you don’t have an excuse on why you can’t make this dish. And since your going to make this dish, just relish the fact that your going to be biting off a succulent bite of chicken bathed in gravy!

Chicken with Mustard Gravy
4 boneless skinless chicken breasts
1/2 tsp salt, divided
1/4 tsp black pepper, divided
2 TB butter
4 tsp honey mustard
1 TB milk
1/2 tsp dried basil
1/2 tsp dried parsley
1/2 cup sour cream
Rub chicken with 1/4 tsp salt and 1/8 tsp black pepper. In a large skillet over medium heat, cook chicken in butter for 6-8 minutes on each side until cooked through and juices run clear. Remove and keep warm
In the same skillet, combine the mustard, milk, basil, parsley, and remaining salt and pepper. Cook and stir over low heat until heated through. Remove from the heat; stir in sour cream. Serve over chicken.
