Okay, I gave you two full weeks off from any pumpkin recipes.

This cake is a crowd favorite. I’ve been making it since I first saw it air on the Rachael Ray show back in 2007…and it’s always a hit!

I make this every year for our church’s Thanksgiving potluck. And then there was one year when I didn’t make it and I made something else in its place.

People wondered where it was.

I heard, “I wait all year for this cake!” and “It’s not a Thanksgiving potluck without that cake!”

So, needless to say, I make it every year now. Lesson learned. The people have spoken!

One of the things I enjoy about this cake is that I can make it ahead of time and another is that it only takes 15 minutes to prepare. Oh, and it is so so moist! Which is probably from all the butter!

This quick and easy, make-ahead, moist, festive gooey pumpkin butter cake recipe is a perfect go to for get-togethers and potlucks this season!

Ingredients

For the Cake

  • 1 (18.25 ounce box) yellow cake mix
  • 1 egg
  • 1 stick butter (1/2 cup), melted

Filling

  • 8 oz cream cheese, softened
  • 1 (15 oz can) pumpkin pie filling
  • 3 eggs
  • 1 tsp vanilla extract
  • 16 oz. powdered sugar
  • 1 stick butter (1/2 cup), melted

Instructions

  1. Pre-heat oven to 350 degrees. Grease a 9x13 baking dish with non-stick cooking spray.
  2. In a large bowl, beat cake mix, melted butter, and egg with an electric mixer or with the paddle attachment of your Kitchenaid. Remove cake dough and press into 9x13 baking dish and spread evenly to make a crust.
  3. In a mixing bowl, beat cream cheese until smooth. Add pumpkin, eggs, vanilla, and sugar. Beat well. Reduce speed and stir in melted butter. Pour filling into cake crust.
  4. Bake for 40-50 minutes until cake is set. The cake will jiggle slightly in the middle, but will firm up as it cools. Cut into squares and serve!
